Menu engineering: selling tool

Small restaurant owners (less the 1,000,000 in gross sales) do not understand or realize that your choice of colors, paper, typeface, layout and other elements of menu design is a big part of your sales and marketing efforts. Outlining the designated item with a box, putting it in bold print, using a larger than normal type size, or adding a color photograph are some frequently recommended ways to attract attention to menu items and thus increase sales.
